type='text'>The language of Coffee</title><content type='html'>&lt;h2&gt;Latte&lt;/h2&gt;&lt;br /&gt;A latte is one of several types of coffee beverages made with hot milk. The term is from the Italian "caffè e latte" (commonly "caffè latte"), for "coffee and milk," analogous to the French "café au lait."&lt;br /&gt;&lt;br /&gt;As the term has come to be used in the United States since approximately 1985, a latte consists of one or two shots of espresso and about three times as much hot milk, topped with a small amount of milk froth. A latte has more milk than a cappuccino, and has a weaker, milkier taste. Lattes should be prepared by pouring milk and coffee simultaneously, from either side of the drinking vessel, which ideally should be a tall, ceramic mug.&lt;br /&gt;&lt;br /&gt;The evolution of this term (and this particular form of the beverage) is relatively recent and probably dates from the spread of the 1980s Seattle coffee craze to the rest of the United States (and beyond) via the growth of Seattle-based Starbucks. As recently as 1980, if you ordered a "latte" in an Italian coffeehouse in San Francisco, you would expect to get a glass of milk. If you ordered a "caffè latte," you would get a beverage with far less milk in it than what has now come to be called a "latte."&lt;br /&gt;&lt;br /&gt;Since around 2000, coffee shops such as Starbucks have started topping lattes with whipped cream.&lt;br /&gt;&lt;br /&gt;Keep in mind, ordering a "latte" in a café in Italy will result in the barista serving you a glass of milk without coffee&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;Mocha&lt;/h2&gt;&lt;br /&gt;"Mocha" has two meanings in the context of coffee.&lt;br /&gt;&lt;br /&gt;Mocha coffee is an arabica coffee grown near the seaport of Mocha, Yemen (thus the name). This coffee is known for its undertones of chocolate, although it does not have any actual chocolate in it.&lt;br /&gt;&lt;br /&gt;Mocha, used by itself for the name of a beverage, usually means a beverage made with coffee and cocoa. (The drink is sometimes served iced.) The word is also sometimes used to describe something with the flavor of coffee and chocolate (e.g. mocha ice cream).&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;Cafe au lait&lt;/h2&gt;&lt;br /&gt;Café au lait is a French coffee drink prepared by mixing coffee and steamed milk. It is similar to Italian latte, but with coffee instead of espresso.&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;Demitasse&lt;/h2&gt;&lt;br /&gt;A small cup (normally about 3 oz.) used to serve turkish coffee or espresso. The word means little cup in Italian.Typical design in the west is a white porcilean cup (appearing similar to the cups in a child's tea set) with matching saucer, though some coffeehouses also sell brightly decorated variaties. Another type of demitasse is a glass cup set into a metal frame.&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;Drip Brew&lt;/h2&gt;&lt;br /&gt;Drip brew is a method for brewing coffee which involves pouring water over coffee contained in a paper filter. Water seeps through the coffee, absorbing its oils and essences, solely under gravity then passes through the bottom of the filter. The used coffee grounds are retained in the filter with the liquid falling (dripping) into a collecting vessel such as a carafe or pot.&lt;br /&gt;&lt;br /&gt;Although paper filters are used all over the world, with the benefit of holding the used grounds for disposal, metal filters are also common, especially in India. These are made of thin perforated metal sheets, the holes being smaller than the size of the coffee grounds.&lt;br /&gt;&lt;br /&gt;Drip brewing is the most popular method of coffee brewing, owing to the overwhelming popularity of the automatic drip brewing coffee machine. There are, however, several manual drip-brewing devices on the market, offering a little more control over brewing parameters than automatic machines.&lt;br /&gt;&lt;br /&gt;Compared to other brewing methods such as French press or Espresso, in which the brewing water doesn't go through a paper filter, drip brewing produces clear, light-bodied coffee, which is free of sediments but also of some of coffee's oils and essences which can get trapped in the paper filter.&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;Irish Coffee&lt;/h2&gt;&lt;br /&gt;Irish Coffee, or so the lore would have it, was invented at Foynes, the precursor of Shannon Airport in the west of Ireland as a warmer for trans-Atlantic travellers in the 1950s.&lt;br /&gt;&lt;br /&gt;A classic Irish coffee consists exclusively of hot coffee, Irish whiskey and sugar, with cream (proper cream, not "Irish cream") floated on top. It is made as follows:&lt;br /&gt;&lt;br /&gt;Pre-heat coffee glass with hot water and empty. Add one ounce of whiskey to glass and fill near to top with slightly sweetened coffee. Float cream (which may be whipped, but is usually a pouring cream, added by pouring it onto the back of a spoon, resting on the coffee's surface) on top.&lt;br /&gt;&lt;br /&gt;The sugar is necessary, or the cream will not float.&lt;br /&gt;&lt;br /&gt;Nutmeg, cinnamon, or another spice may be added, but are not usual.&lt;br /&gt;&lt;br /&gt;An alternative version, more properly known as "Bailey's Coffee", adds an ounce of Baileys Irish Cream, a liqueur to the mix, or may replace the whiskey with the Baileys altogether.&lt;br /&gt;&lt;br /&gt;&lt;h2&gt;Risretto&lt;/h2&gt;&lt;br /&gt;Ristretto is a very short shot of espresso coffee. A normal (double) espresso shot is a 2 fl.oz or 0.6 DL extraction over 25-30 seconds.
